ABOUT: Australian Saddletail Snapper Fillets, (RAW) ready-to-cook! Saddletail is a saltwater off-shore fin-fish caught predominantly ‘Top-End’ and ‘Queensland’.
EATING: Saddletail Snapper has a mild fish flavour, low in oiliness, moist, flaky firm texture, white flesh when cooked, uncooked the flesh is dark pink in colour. It is very versatile and suits many cooking methods. Saddletail Snapper are often large, but the smaller fish are excellent baked whole (gilled and gutted – of course).
