Queensland Saucer Scallops are commercially harvested and mostly from the warmer waters of Tropical Queensland (Hervey Bay in particular). They have a more flatter shell compared with Commercial Scallops from the Southern parts of Australia. They are a popular choice with chefs and a regular on any restaurant or celebration menu. They are an elegant-small size, usually grow to approx. 8 – 10 cm across. They make the most gorgeous canapés. Seared lightly, and dressed with a lightly aromatic herb sauce, it is the essence of the sea. Served mostly medium rare. ‘Sashimi grade’ so they can be eaten raw.
